Coconut Chia seed Pudding

I guess chia seeds were my first step into superfoods. Few years ago I discovered Deliciously Ella blog and the first thing that caught my eye was this beautiful image of chia pudding with blueberries. Had my first trip to organic grocery store and never looked back. In general, chia seeds are full of goodness - they are rich in fibre, great source of omega 3 fatty acids, protein (hello, fitness training!), calcium, zinc, magnesium and iron - perfect breakfast food. 

FOR PUDDING:

  • 3 tbs chia seeds
  • 1 tbs honey
  • 1 tsp cinnamon
  • 1 cup of rice and coconut milk (unsweetened)
  • 1 tbs freshly grated coconut (can be desiccated too)

Now, to pimp your ride, feel free to use any kind of fruit and berries that you like. For this one I used:

  • handful of raspberries (duh)
  • half of persimmon

METHOD:

Add chia seeds to the glass and slowly pour the milk over them, stirring at the same time so they don’t stick to each other. Then add cinnamon and honey, mix it well. Place in the fridge for couple of hours (best to leave over night). Before serving add grated coconut and stir thoroughly, then layer in a glass bowl or jar with fruit or berries. Here you go!
